一、看色泽 颜色微黄。干银耳外观看起来又大又白的千万不要购买，因为这是用硫磺薰蒸过的，有毒！
二、看炖后 容易炖软，胶质很重，营养价值高。煮后放至冰箱可成果冻状。煮出来的银耳汤很稠浓，入口即化，吃起来很软糯清香的味道。
